Usually, people tend to think homemade food tastes better than delivery or takeout. But this is not always true of pizza. In fact, the opposite tends to be true; people often think takeout or delivery pizza tastes better than the pizza they are able to make at home. Have you ever wondered why this is? As it turns out, there are a few things that set restaurant pizza apart.

Hotter Ovens

Restaurants have pizza ovens that bake at really high temperatures—often 700 degrees F or higher. This allows the crust to develop the perfect amount of crispiness without getting overdone. Home ovens do not get anywhere near as hot, which means homemade pizza has to be baked at a lower temperature. The crust, therefore, emerges with a different texture. Homemade pizza crust can be good, but the average home oven is simply not capable of turning out a pizza with that restaurant-style crunch and crispiness.

Perfect Ingredient Balance

Do you measure your ingredients before putting them on your pizza? The best pizza restaurants do. Or at least, their pizza chefs have made so many pizzas that they know exactly how much sauce, cheese, and other toppings to add to each pie. The margin for error is smaller than you might imagine. A little too much sauce and your crust ends up soggier than you'd like. Not enough cheese and your pizza tastes flat. Many home pizza makers don't get the ingredient balance quite right, which is a factor in why their pizza isn't as amazing as restaurant pizza.

If you ask people what cheese belongs on pizza, they will often tell you "mozzarella." You can make a pizza with just mozzarella, and many home cooks do. But a lot of restaurants actually make their pizzas with a blend of cheeses, and the pizzas taste all the better for it. It's common for them to use a mixture of provolone, asiago, mozzarella, and even some mild cheddar. The blend of cheeses adds to the complexity of the flavor, and it can also make the cheese less gummy and stretchy.
